There’s nothing quite like a mess of oysters sizzling over hot coals. Briny, smoky, and kissed with butter, grilled oysters are a taste of the coast in its purest form. You don’t need much—just a bag of fresh oysters, a hot grill, and a few simple ingredients to let the sea speak for itself.
Grilling oysters is as old as the tide, a favorite at fish camps and backyard gatherings alike. The shells pop open over the flames, releasing that ocean steam, and what you get is a bite that’s rich, smoky, and perfect with a cold drink. It’s the kind of food meant to be eaten standing around the grill with friends, no plates required.
Grilled Oysters Recipe
Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 8 minutes
Ingredients
- 2 dozen fresh oysters, scrubbed
- 1 stick (½ cup) unsalted butter, melted
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 tablespoon hot sauce (optional)
- Fresh parsley, chopped (for garnish)
- Kosher salt and black pepper, to taste
Instructions
- Preheat the grill to medium-high heat.
- Make the butter sauce: In a small bowl, combine melted butter, garlic, lemon juice, hot sauce, salt, and pepper.
- Grill the oysters: Place oysters, cup-side down, directly on the grill grates. Close the lid and cook until the shells begin to pop open, about 5–8 minutes.
- Shuck and sauce: Using tongs and an oyster knife, carefully pry open each shell. Spoon a little butter sauce over each oyster.
- Serve hot: Garnish with parsley and enjoy immediately with extra lemon wedges and hot sauce on the side.
Pro Tip: Set the oysters on a bed of coarse salt in a baking pan if you’re worried about them tipping on the grill.
